Amarone della Valpolicella D.O.C.
Garnet red with a woody fragrance, spicy, on tasting a lasting flavour of mature red fruits, full of body and flavour.
Of our own property set in a beautiful hillside location in the heart of the Valpolicella Classica area.
After picking and a careful selection, the grapes are put in wooden crates and left to wilt in dry, airy cellars. This operation favours the release of an extremely high concentration of sugars and other fundamental components such as aromas and glycerine. After 3-4 months in mid winter grapes are very lightly pressed due to the cold season. The must collected begins a long, slow fermentation and then the wine is put in oak barrels for about three years and subsequently in barriques for approximately 12 months.
Excellent with game, roast meat and spicy , hard, mature cheeses. Served in between meals it's an extrordinary “meditation” wine. Best opened an hour before serving and served in large cristal glasses to allow a good oxygenation.
